Roasting coffee

In the Arabian wild, coffee is roasted in a similar pan but over a campfire. Here i tried to emulate the general method using green coffee beans from an Ethiopian grocers

Chicken Enchilada

I found this recipe online,the chicken is mixed with the sauce and with olives, the sauce is based on a roux with 3 kinds of of fresh green pepper which i roasted and pureed.
